Happy Monday! As of Sunday morning at 3:30am I didn’t think I would be saying “happy monday” this week but things perked up. Poor Forrest had an ear infection attack while we were at the family reunion so we busted out of there at 3:30am rather than keep the entire house awake with his crying. Poor guy. Luckily he fell asleep well in the car (probably due to the elevated head position?) and slept till 7:00am, then took several naps on Sunday (which allowed ME to take a good long nap, too) and all is well today. He’ll be on eardrops for the next 5 days… we’ll see how well that goes.
I made a super yummy, super rich dessert for the group Saturday night, inspired by this lovely concoction. I chose a fewer-steps method and made a couple of Jello nobake cheesecakes (mix comes in a box with crust crumbs, just add butter, sugar and milk as needed), then served it with fresh whipped cream, chocolate and caramel sauces, and the toasted coconut. OMG-with-a-thousand-exclamation-points it was good. Rich, decadent, easy, and good. You could do the same thing with a Costco cheesecake, of course, but there was something about the Jello cheesecake that was hard to beat. If you actually make a cheesecake, gold stars for you!
I totally put food on the floor in this photo to keep Forrest there by the sun. I would do it again, too. = )
